The week sure has felt short with July 4th falling on a Tuesday this year. We hope you've had a great week. Here are a few highlights from ours:
Did you have a great 4th of July? What did you do? We hope your day included time with family, friends, grilling out, parades, and of course, FIREWORKS!!! We had a pretty low-key day that included a trip to Sonic for hot dogs and grape/lemon slushes, an Iced Americano from Starbucks (Andrew's fave!), and watching our neighbor's private (BIG) fireworks display from the comfort of our back porch! LOL
Paleo Apple Pie - with a Twist
Melissa was in the mood to bake a yummy Paleo dessert, and we had apples to eat up, so naturally apple pie came to mind! (Doesn't get much more American than that!) She usually has a go-to recipe, but the large bag of cassava flour was staring her down, begging her to make it into a pie crust. So she did! The crust turned out a little too crumbly, so she improvised, added coconut sugar, and made half of it into a crumble topping.
This apple pie recipe seemed a little odd with lemon zest and lemon juice (!!!) but it's not too bad! It doesn't have an overt lemon flavor but the lemon does give it some depth. Bonus: this apple pie is nut-free and AIP! Woohoo!

The Best Kitchen Appliance in the World
One appliance that gets used constantly in our kitchen is our FOOD PROCESSOR. Melissa uses it almost daily when she's really on a Paleo kick. Homemade mayo is a weekly necessity in our house - plus have you heard of plantain flatbread?? Serious yumminess. There's also an amazingly easy recipe for Paleo pie crust that simply requires a food processor and only 4 ingredients. Four! Makes an excellent base for Paleo quiche - just sayin'. Plus cauliflower rice, pesto, even guacamole - it's well worth the investment.
In case you were wondering, Melissa loves her food processor.
Iron Fist (Netflix)
Has anyone been watching Iron Fist on Netflix? What do you think? We've been big fans of the Marvel movies and TV shows but were unsure what to expect with Iron First. (It received some pretty harsh reviews early on.) We've been pleasantly surprised and are enjoying it! We're only halfway through the season, so we'll see what happens. It's exciting to see all the elements from the other Marvel Netflix shows coming together and building toward the new Defenders series coming out next month (August 2017 - the countdown begins)!!
